Microwave Peanut Brittle
1 cup sugar
1 teaspoon butter
1 1/2 teaspoon baking soda
1/2 cup light corn syrup
1 teaspoon vanilla extract
1 cup dry roasted peanuts
1/2 teaspoon salt
In a 2 quart microwave safe dish combine sugar and corn syrup.
Microwave on HIGH for 4 minutes.
Stir in peanuts.
Microwave on HIGH for 3 to 5 minutes or until light golden brown. (Varies with microwave)
Stir in butter, vanilla and salt.
Microwave on HIGH for 1 to 2 minutes. (Varies with microwave)
Stir in baking soda until mixture foams.
Quickly pour onto foil covered cookie sheet. (Grease foil before pouring)
Cool and break into pieces and store in an airtight container.
Makes about 3 cups.
