Pecan Pie Squares
(Crust)
3 cups All-Purpose Flour
1/4 cup + 2 tablespoons. sugar
3/4 cup margarine or butter, softened
3/4 teaspoon salt
(Filling)
4 eggs slightly beaten
1 1/2 cups sugar
1 1/2 cups Karo Corn Syrup (Light or Dark)
3 tablespoons margarine or butter, melted.
1 1/2 teasopons vanilla
2 1/2 cups chopped pecans
(Crust)
Heat oven to 350 degrees.
Grease 15 1/2 x 10 1/2 jelly roll pan.
Beat flour, sugar, margarine and salt in large bowl (medium speed) until crumbly (mixture is dry)
Press firmly in pan.
Bake until light golden brown. (about 20 minutes)
Prepare filling. (see below)
(Filling)
Mix all filling ingredents except pecans until blended.
stir in pecans.
Pour filling over baked crust layer, spreading evenly.
Bake until filling is set (about 25 minutes)
Let cool.
Cut into 1 1/2 inch squares.
Makes about 70 squares.
