Sopaipillas
1 3/4 cup flour
2 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
2/3 cup cold water
Cut shortening into flour, baking powder, and salt.
Add cold water gradually as for pie crust.
Knead until smooth.
Rest covered for 5 minutes.
Roll into 12 x 15 rectangle, 1/16 to 1/8 inch thick.
Cut into 3 inch squares or 2 x 3 inch rectangles.
Drop into very hot oil turning 3 or 4 times to puff fry 2-3 minutes per side.
